It's an efficient means of dispatching prey, especially when one is set to automatically attack a new target if it presents itself before the ermine has a chance to start eating. Kill more than is needed - otherwise, one risks starvation.
Also, ermines have a great love of the brains of their prey - they like much of the body, save for the paws, tail and tip of the nose, but they appear to really love brain.
